A crew of honey harvesters were busy as, well, bees Monday evening as they set to work collecting honey as part of Woonsocket cousins Mason and Daylyn Baysinger’s honey operation. The Baysingers lease the ground north of Wessington Springs from Andy Strehlow of Geddes, SD and according to Mason, their operation “runs west of Springs to Huron and Willow Lake.”
‘Tis the season for honey collecting, as Baysinger shared that many beekeepers find that the best months to harvest honey is anywhere from July to mid-September. But to maximize the honey collected, bee farmers aim to collect at the last honey flow which typically occurs in September.
